Roasted tomatoes and garlic

Simple and delicious!

Ingredients:

1 head garlic, peeled

1 lb vine-ripened tomatoes, cut in half

1-2 cups extra virgin olive oil (You can use less, but I like to use the leftover flavored oil for bread.)

sea salt and pepper

 

Preheat oven to 400 degrees. Pour olive oil into a glass 8×8 baking dish. Add garlic, tomatoes and sprinkle with sea salt and pepper. Bake for one hour or until tomatoes start to wrinkle and brown.

Avocado & Tomato Salad

I only began eating avocado after moving to California a few years ago. Now I can’t get enough! This recipe is perfect for the summer heat! Try it, it’s fresh and delicious!

 

Ingredients:

2 tomatoes, chopped

2 avocados, diced

honey

balsamic vinegar

sea salt & pepper

 

In a bowl, toss tomatoes and avocados with drizzle of honey and balsamic vinegar. Sprinkle sea salt and pepper. Toss again. Add additional flavorings to your taste.

Roasted Asparagus

Asparagus-enhanced

 

One of my favorite vegetables and very simple to cook. Roast some tonight!

 

Ingredients:

2 lbs asparagus

garlic, chopped (amount optional)

extra virgin olive oil

sea salt

pepper

 

Preheat oven to 400 degrees. Wash asparagus thoroughly. Chop off tough ends and place on a baking sheet. Top with chopped garlic. Drizzle with olive oil , completely coat all asparagus.  Add sea salt and pepper. Roast for 15-20 minutes. Enjoy with some panko chicken and roasted potatoes!

Thanksgiving Ideas: Green Bean Casserole (Lactose Free)

Green Bean Casserole

I recently had to take lactose out of my diet, much to my dismay. It’s been a challenge to recreate my holiday favorites but I think I hit it out of the park with this recipe!

Ingredients:

42.5 oz canned cut green beans, drained

8 oz/1 container baby bella mushrooms, cleaned and quartered

4 cups lactose free milk

6 oz french fried onions

2 tbsp flour

extra virgin olive oil

sea salt &  ground pepper

 

Preheat oven to 350 degrees. Clean mushrooms off with a damp paper towel and then quarter. Add to skillet with a splash of olive oil over medium heat. Cook until tender or slightly browned. Continue over medium heat and add lactose free milk. Whisk in flour, 1 tbsp at a time. Add salt and pepper, to taste. Continue whisking until sauce starts to thicken. You will know your sauce is thickened when you can slightly see the bottom of the pan as you whisk. Turn stove top off. Add in all green beans and 1/2 french fried onions. Mix together well. Pour into 2 quart baking dish and bake 30 minutes. Top with remaining french fried onions and bake 5-10 minutes longer until onions are browned.

Mashed Caulifower

I was really skepitcal when I heard about this substitute for mashed potatoes, however, I was pleasantly surprised! Try it!

Ingredients:

1 head of cauliflower

Freshly grated parmesan cheese to taste

Minced garlic to taste

Salt & pepper to taste

Wash the cauliflower and then break the head into small florets. Steam for 12-15 minutes, or until tender. Add cauliflower to a mixing bowl and use a hand mixer on high speed until completely blended and smooth. Add other ingredients to taste.
